Earlier this summer, Banh Shop—a new Banh Mi restaurant in Texas from the parent company of KFC and Taco Bell—needed street-level video of Ho Chi Minh City food vendors for an online ad campaign, and fast. Banh Shop executives eschewed the major agencies, even though several maintain satellite offices in Vietnam, and instead turned to a tiny ad shop in the West Loop.

“It was so refreshing,” says Christophe Poirer, a former KFC chief marketing officer who is heading Banh Shop for Louisville, Kentucky-based Yum Brands Inc. “I was a CMO for many years, and I can tell you that if I had to work with a big agency, there would have been so many meetings: ‘What is my budget? Let’s get a conference with Vietnam.’ “
